Fall is one of my favorite times of the year. The leaves change into beautiful vibrant colors. The weather is still warm but not too hot. It’s time when football season starts and a time for pulling out your favorite pair of jeans and your favorite sweater or hoodie.
There is just something about this time of year!
Another reason I love fall is all the wonderful sweets and treats from apple crisps, to cobblers, and pumpkin pie.
Since being diagnosed with Celiac disease a few years ago, I am constantly trying to find recipes that can be made gluten free.
This Slow Cooker Peach Cobbler recipe is a “fix it and forget it” delicious dessert.
- 1/3 cup Bisquick baking mix (Bisquick Gluten Free – Optional)
- 2/3 cup quick-cooking oats, uncooked (Gluten Free Oats Optional – I use Bob’s Red Mill http://www.bobsredmill.com/gluten-free-rolled-oats.html)
- 1/2 cup brown sugar, packed
- 1 teaspoon cinnamon
- 4 cups sliced peaches
- 1/2 cup peach juice or water
Combine baking mix, oats, brown sugar and cinnamon in a slow cooker. Stir in peaches and juice or water. Cover and cook on low setting for 5 to 6 hours. Remove lid for last 30 minutes to crisp the top. Serve with ice cream or whipped cream.
Serves 4 to 6. Enjoy alone or with your favorite vanilla ice cream.
