Now here is a great recipe for all you au gratin lovers! Smoothness of the cream and the cheese blends perfectly with the zucchini and squash giving this dish a delicious taste to savor. This recipe is ideal for chicken or fish; serve with sides of buttered noodles, and cinnamon applesauce for a great accompaniment.
This dish takes about 40 minutes to prepare start to finish. It never disappoints us!
Zucchini-Squash Au Gratin
- 2 Tbsp. butter
- 1 large zucchini
- 1 large squash
- 2 medium shallots, minced
- 1 tsp. garlic (fresh or jar)
- ½ cup of heavy cream
- ¼ cup of shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- ½ tsp. of oregano
- Parmesan cheese, to taste
Preheat your oven to 450 degrees.
In a large skillet sauté the shallots and garlic in the 2 Tbsp. of butter.
Cook through until shallots are translucent.
Add in the zucchini, squash and heavy cream.
Add in the salt, pepper, and parmesan cheese.
Cook 8 to 10 minutes or until mixture is bubbly.
Transfer mixture to an oven safe baking dish and sprinkle with a little more parmesan and the shredded cheese.
Bake an additional 10 – 14 minutes or until the mixture is bubbly and golden brown on top.
